A Creative Twist: Coconut Cream Pie with Ube Shortbread Crust

Inspiration can strike from the most unexpected places, and my latest creation came from a grocery shopping trip at Trader Joe’s. As someone who enjoys spontaneous shopping without a list, I often end up with delightful surprises. This time, it was Trader Joe’s Ube Shortbread Cookies that caught my eye. Immediately, the idea of using these cookies as a crust for a coconut cream pie came to mind—an irresistible blend of flavors and textures.
